Creamy Coconut Melon Sago Dessert

Recipe from Experiments in the kitchen
Make 10 small cups


Loads of rock melon balls served in creamy melon coconut milk shake and sago!




Ingredients

1 Rock Melon
1 to 2 tbsp Condensed Milk
200 ml Kara Coconut Cream
1 cup Sago
7 cups of water for cooking the sago



Method


Preparing the Melon
  1. Cut melon into half
  2. Remove the seeds
  3. Scoop out the melon balls using a baller
  4. Reserve those melon juice and melon balls closer to the seeds for puree (about 1 cup) as they are softer and are more juicy
  5. Set aside the rest of melon balls in the fridge

Preparing the Melon Coconut Milk Shake
  1. Using 1 cup of melon balls (reserved for puree), blend with 200ml of coconut cream and 1 to 2 tbsp of condensed milk until smooth
  2. Set aside in fridge

Preparing the Sago
  1. Rinse the sago and discard water
  2. Soak the sago for 15 mins
  3. While soaking the sago, bring 7 cups of water to boil
  4. Drain away water before adding the sago to boiling water
  5. Boil for 8 mins
  6. Using a sieve and in few portions, drain the sago by stirring a spoon against the sieve
  7. Transfer sago to cold water
  8. Sieve and drain the sago
  9. Chill in fridge until ready to serve (It will sticked together after chilling)

Serving the dessert
  1. Scoop 2 big tablespoons of sago into a cup
  2. Add 1 tbsp of melon coconut milk shake and stir with a fork to separate the sago. There will be small lumps of sago and its fine!
  3. Load the cup with melon balls
  4. Top with more melon coconut milk shake
  5. Serve chilled
